Should I charge extra for plant-based milks?
Almost every specialty café does. Plant-based milks cost 2–4× what dairy does per ounce. Standard practice is a $0.75–$1.25 upcharge, which covers the cost difference and protects margin. Cafés that don't upcharge end up subsidizing oat milk drinkers with worse margins on every plant-milk drink.
Which plant-based milk is most cost-effective?
Oat milk (Pacific Foods, Califia, or barista-grade Oatly) is typically the cheapest per ounce at scale, runs around $4–$6 per 32oz carton. Almond is usually mid-range. Coconut and macadamia are typically the most expensive. Bulk pricing changes the math significantly — call your distributor for case pricing.
How do I track plant-based milk usage to know my real cost?
Two ways: (1) count cartons used per week and divide by drinks-with-alt-milk in POS reporting, (2) bottom-up — measure your standard pour size in oz, multiply by drinks served. Most cafés are surprised by how much waste happens at the milk station — over-pouring adds 15–30% to true cost.
Does upcharging hurt sales?
Rarely. The 'oat milk customer' is typically less price-sensitive (and often higher loyalty) than the average dairy customer. Customers who push back on alt-milk upcharges tend to be vocal but small in number. Most cafés we work with see no detectable demand shift after introducing or raising the upcharge.
